i saw an episode of LOWCARB COOKWORX
they made a fauxtato (stove top hash brown) recipe using celery root (celeriac) diced along with diced green & red pepper & onion. I must try that. It looks easy enough that even this troll can’t screw it up. I imagine it would work with jicama as well. Drs Eades do make a lovely couple, i must say!!! Love & Profits: FLATFERENGHI

Lowcarb Cookworx was a show that Drs Eades did in 2005 that aired on PBS. I noticed that a few PBS stations have started to show reruns of the show. If you google "Lowcarb Cookworx" they have all the recipes from the show online.

it was, in my area, Bklyn: NY io cablevision ch 133 (Create-an adjunct of PBS). there is no regular times for any of these shows. they throw them in at any old time. cooking shows, hope repair, painting, This Old House etc. Sometimes they will have a "theme" weekend. FF

celery root makes AWESOME hashbrowns! I like them better than potato hashbrowns. I like to make them like potatoes O’Brien.

Do you cook the Celery Root before doing the hash browns? If so, how?? I like celery root, generally, but have never gone raw shredded to in-the-skillet before, so am wondering.

I do cook the celery root first or else it takes a while to brown/soften. I usually cut it into smallish cubes (make sure to remove outter skin) and then add to a skillet and cover with water. Put a lid on and steam until almost tender. Drain into collander. Put skillet back on stove and add 2 TBS or so of butter and chopped onion (cook until translucent) then add chopped green or red pepper and add the celery root back. Cook on medium until everything starts to brown a bit. Season w/ salt/pepper. I just eyeball the amounts, sometimes it needs more butter if I make a big batch.
