Breakfast – Maggie’s cereal w/blueberries.
Lunch – Assorted veggie crudite and a Chipolte seasoned pork burrito in a l/c tortilla.
Dinner – Lettuce salad and a piece of Deep Dish Pizza Supreme.

    Brunch/lunch: I just couldn’t stomach another portion of meat protein and veggies (am I the only one who feels like this sometimes?) so had full fat yogurth with some added creme fraîche, berries, a pear and almonds. Green tea.

    Planning for dinner: Salmon and mashed cauliflower with butter and raw veggie salad with dressing. Fruit.

    Evening: Cheese chips and veggies? Whipped cream with berries and nuts?

    Dijonaise & cheddar crusted cauliflower

    1 head of cauliflower
    mayonaise
    dijon mustard
    shredded cheddar cheese

    Trim the cauliflower and hollow out part of the core. Place the head (whole) in a pressure cooker or in a steamer basket in a large pot, and cook for about 4 minutes under pressure or, if steamed, until the head is "al dente" when a knife is inserted (about 6-8 minutes, depending on the size of the head). Remove the head to a pam sprayed baking dish. Coat the cauliflower with a mixture of 2 parts mayo to 1 part Dijon mustard. (The amount you will need depends on the size of the cauliflower.) Pat the shredded cheddar cheese onto the top and sides of the coated cauliflower and bake in a preheated 350 degree oven until the cheese is melted (about 5-10 minutes) You may bake it longer if you want a crustier cheese topping. The whole head makes for a nice presentation which is cut into wedges to serve. The Dijonaise topping and melted cheese make for a nice sauce for the cauliflower.

    Now, all I have to do is adapt this to my frozen cauliflower–but that won’t be hard at all. It sounds wonderful!!!

    always looking for another hundred ways to fix cauliflower

    I wonder how many of us lowcarbers are like me–
    never really liked or ate cauliflower before, unless it was on a veggie tray,
    but now I have prolly 6lbs. of it in my freezer, and when I go below 2 or 3 bags—it goes promptly on my shopping list–
    and like you, I often have it more than once a day–and in more than one format….

It’s Monday, What are YOU eating today?

Breakfast:
3 eggs fried in bacon grease
2 slices of bacon
2 Juvenation vitamins
3 cups of plain, black coffee

Lunch:
Bed of lettuce with 1 cup chicken salad on top
cucumber, tomato, onion, green pepper mix with ranch dressing
1/2 cup raspberries with cream cheese, whipped cream combination…….
Water

Supper:
Boneless Rib-eye
Lettuce salad with a sprinkle of cheese and ranch dressing. (add radishes, tomato, broccoli and cauliflower)

    And none of my Grandma’s once-a-year homemade strawberry shortcake

Cauliflower "Colcannon"

Recipe By : Dottie
Serving Size : Makes 6 servings, ½ cup each

1 pound frozen cauliflower
1 cup mixed greens — use frozen, thawed, about 1/2 package
4 slices bacon
2 tablespoons butter
3 tablespoons half and half
1 each salt and pepper to taste

Cook cauliflower according to package directions plus an additional 5 minutes to soften further.
In the meantime, thaw the greens and drain. Fry the bacon in a large skillet until crisp. Remove and crumble, set aside. Saute the greens in the bacon fat until cooked through and the liquid is evaporated.
Once the cauliflower is cooked well, drain and press out as much water as possible. Place cauliflower, butter, half and half, salt and pepper in a food processor and process until smooth. Add to the greens in the skillet and toss in the bacon. Stir until heated through. Serve hot.

BREAKFAST – Blueberry and Cream cheese omelet
1 large egg
1 large egg white
2 tablespoons sugar free syrup
1/4 cup fresh blueberries
2 tablespoons whipped cream cheese
12 ounces coffee
1 tablespoon half and half
1 serving sweet ‘n Low® sweetener
LUNCH – Chicken Alfredo Pizza
3 ounces boneless skinless chicken breast — cooked weight
1 cup spinach leaves
4 tablespoons Ragú Alfredo Classic Pasta Sauce
2 tablespoons grated parmesan cheese
1 each flatout Light Low Carb Wrap
DINNER
1 medium chicken drumstick
1 medium chicken thigh
1 tablespoon extra virgin olive oil
1 cup broccoli florets
2 cups shredded lettuce
1 tablespoon italian salad dressing

Per Serving: 1086 Calories; 73g Fat (58.1% calories from fat); 78g Protein; 39g Carbohydrate; 15g Dietary Fiber; 434mg Cholesterol; 1528mg Sodium.

Omelet: Mix 1T s/f syrup with the egg and white, spray pan with cooking spray and cook until set. Add blueberries and cream cheese, fold and turn off heat -cover to melt cream cheese. Top w/remaining 1T syrup.

Pizza: Mix cooked, diced chicken with spinach in a small pan, add 1T water and steam for a minute to wilt spinach. Add alfredo sauce and mix well.
Spray flatbread with olive oil cooking spray and bake in a 350 oven until just starting to firm up, then flip and spray other side bake another 2-3 minutes. Watch carefully because they burn fast.
Remove from oven and spread chicken/spinach/sauce on top and sprinkle with parmesan cheese. Pop back in the oven to heat through.

It’s MONDAY! What are you eating today?

B’fast: flax ‘n bran pancakes*; coffee
Lunch: tuna in olive oil w/dill; steamed yellow squash; big green salad w/italian dressing; red tea
Dinner: shrimp and veggie stir fry

flax ‘n bran pancakes
2T ground flax
2T wheat or oat bran
2 large eggs
enough milk to make a "batter" (1-2T)
slight pinch salt
2 drops stevia (or 1/2packet)
Beat eggs and add all ingredients. Let sit for a minute then add milk if needed. Spray a pan with cooking spray and make 2-3 pancakes. Cook until set, flip and cook another minute.
Serve w/butter and s/f syrup if desired.
No info, I guess about 4g net carbs for the entire batch.

    D: Adobo Chicken w/sliced yellow squash

    For my blender egg nog, I put two jumbo eggs, raw, in the blender with about 2 Tbsp. Cream, a dash of nutmeg, a few drops of vanilla and Splenda (granules) – blended for about 30 seconds – and YUM. Instant liquid breakfast with a sweetness and holiday flair! LOL

    I am curious to see if the eggs made this way curb my appetite as well as 2 scrambled eggs. Also, I will probably nosh on a few olives and maybe a small piece of cheese at work between lunch and dinner.

It’s MONDAY! What are you eating today?

Good morning! Hope everyone had a great weekend

Going to try the 5 Factor Diet and see how it goes I read through the book and recipes. Even though it uses low to moderate glycemic carbs, I will probably be using more veggies and less ‘carby’ foods than the book calls for.
It’s lower fat, adequate protein and low glycemic… there is a lot of food each day, a LOT.

B’fast: 4 egg white and 2 cups spinach omelet; coffee
Snack: 1/2 cup low-fat cottage cheese pureed w/Mrs Dash; 1 cup celery sticks
Lunch: Turkey chili (2oz ground turkey breast sauted w/1/2 cup diced onion, 1 cup dark red kidney beans, 1 can ro*tel tomatoes topped w/light sour cream); red tea
Snack: 1 small green apple and 1 cup plain light yogurt w/cinnamon and stevia
Dinner: mushroom and barly risotto w/shrimp

Christmas Eve Dinner – Roast turkey, cranberry relish, zucchini carbonara, green beans, and Cranberry Velvet Dream Pie filling for dessert.

Good Morning!!
Breakfast – 1/4 grapefruit and Maggie’s cereal w/cranberries.
Lunch – Red leaf & romaine lettuce salad and a piece of zucchini lasagna.
New Years Eve Dinner – shrimp cocktail and sliced avacado w/California style chipolte cocktail sauce and scallops primavera in a white wine & cheese sauce served over Dreamfields linguini.
Late night snack – deviled egg, 3 l/c crackers w/cheese, champagne.

A new week already! The year is sure flying by…

B’fast: 1 egg scrambled w/1oz chorizo and lots of zucchini, onions and mushrooms; coffee
Lunch: chicken breast w/BBQ seasoning rub; salad: romaine, cucumber, red onion, radishes and evoo/vinegar dressing; red tea
Dinner: 6oz ribeye; asparagus; green and wax eban salad w/italian dressing

I hard boiled a dozen eggs last night, so if I get snacky, I’ll have one or two

    ** I noticed that I do better when I have the "Higher" Carb foods at night (instead of morning or during the day). I have started eating the fiber one before I go to bed. It seems to be working like a "Charm". Not hungry all day and My "Train" is always on time in the Morning.

    It’s meat and egg to mix things up a bit-kind of like Atkins 72. It helps to get you into deep ketosis and is often a springboard for Induction.

    That is what I have packed to take to work for breakfast and lunch.

    Not sure if I can handle roast beef again for dinner. I am undecided on that one.

    if you have some parmesan cheese, cut the chicken into strips, coat with beaten egg and grated parmesan then either fry or bung in the oven… these are so yummy

    Oh yes thank you, what a brilliant idea. I have some parmesan in a tub in the fridge, not fresh but then again that is probably good as fresh parmesan is way too yummy to last very long!

    I suppose I could do all 4 breasts I defrosted last night like this and maybe have them with salad for my lunch too? Will they keep in the fridge or go soggy?

Good Morning!!
Breakfast – Maggie’s cereal w/cranberries.
Lunch – Pork and mushrooms in sour cream and sherry mushroom cream gravy served over cauli-rice, and broccoli.
Dinner – Grilled steak w/sauteed mushrooms, twice baked fauxtatoes, and asparagus.

    Breakfast - 3 eggs fried in 1 tablespoon Butter – coffee w/heavy cream

    Lunch - 3 oz chicken breast, 1 cp lettuce w/2 tablespoons of Hidden Valley Bacon Ranch dressing – diet pepsi

    Dinner - 4 oz broiled salmon, 2 cp’s of lettuce w/2 tablespoon’s of the Ranch dressing

    3 Tablespoons of Coconut Oil – spread through out the day

    Lunch: Home made beef stew, with steamed veggies (sprouts and green beans.)

    Dinner: Steamed asparagus with butter, then pork loin steaks, either fried or on the George Foreman grill, with baby spinach leaves sauted in olive oil and garlic, garnished with pine nut kernels.

    Dinner: Trout fillet baked in lemon and butter served with mushrooms, yellow pepper, cherry tomatoes and onion along with boiled celery (sounds odd but yummy!)

    Plus 2 more litres of water and an hour at the gym.

Lunch – Chili
Dinner – I will be taking DW to her favorite Italian restaurant for her birthday. I will have their Atkins Special, lettuce salad and char grilled chunks of marinated chicken breast in Alfredo sauce w/fresh spinach and proscuitto. We will return home for dessert where we will split a l/c mini Baked Alaska.

It’s MONDAY! What are you eating today?

Good Morning!!
Breakfast – Maggie’s cereal w/blueberries.
Lunch – Hot & sour soup and tuna salad stuffed tomato.
Dinner – Lettuce salad, 1/2 of a chicken roll on Dreamfield’s spaghetti w/marinara sauce, and a piece of Almond Joy pie for dessert.

Good Morning!!
Breakfast – Cantaloupe and Maggie’s cereal w/cranberries.
Lunch – Lettuce salad and a piece of Deep Dish Pizza Supreme.
Dinner – BBQ pork steak, sliced fresh tomatoes, broccoli-cauliflower salad, and Dreamfield’s penne pasta salad.
