pork rinds and ranch dressing . . . oh my!

Friday, March 20th, 2009

I finally found pork rinds — I swear, nobody sells them near me! I got Utz BBQ flavor, and dipped them into some ranch dressing. Oh my — crunchy, salty, ranchy — it was a little bit a cruchified heaven! And, no funky/piggy flavor, that I got the last time I tried a pork rind!

The bad news is that there’s no stop signal on these babies. Like, you can only eat SO MUCH steak, before you just have to stop. Here, it’s salty air — I could have eaten a whole bag. In fact, I think I ate half a bag, and way too much ranch, before I locked it away!

The good news is that I didn’t go off plan. The bad news is that I may never pee again! I can’t imagine how much sodium was in there — I’ve been drinking water for HOURS now, and haven’t had to go.

Tomorrow’s weigh-in should be . . . interesting!

Healthy Salad Dressing?

Thursday, March 5th, 2009

It seems like every salad dressing I see in the supermarket has soybean oil or some other hydrogenated oil in it. Where can I find good low-carb dressings without unhealthy hydrogenated / man-made / vegetable oils? Specifically, I LOVE Ranch and Caesar! Can anyone help me?

Thanks!

Paul

Freezing homemade dressing?

LOL, I may mix my dressing/mayo too in bulk, and I thought about freezing it for easy access. Is it possible, does anyone do this? If so, how do you store it? TY!

Delicious organic ranch dressing that actually tastes like ranch?

Saturday, February 21st, 2009

I grow tired of buying organic dressings that don’t taste like what they claim. So, are there any decent ranch brands out there that taste like the real thing?

Salad – With or Without Dressing?

Thursday, January 22nd, 2009

I think my tastebuds have finally made the switch.

Due to some medical issues, I don’t do well if I eat a salad with dinner – cooked veggies are mostly okay, sometimes. (Don’t ask)

But, for the past two days, I’ve made a wonderful veggie salad that’s about 1 1/2 cups total (which I paired with a 0 carb ham salad). It has the following

Spring mix with herbs
Broccoli
Mushrooms
Fresh green beans
Tomatoes
Celery
Onions
Bell Pepper
~1 T of chopped Walnuts
~1 oz blue cheese crumbles

I mixed it all up the night before and let it sit until lunch. I only needed a little salt and pepper – I didn’t think the veggies needed dressing. The ham salad was meant to be the dressing since it has mayo in it, but I’m eating it on the side.

Has anyone else discovered how good fresh veggies taste?
