Main Dish Like Velveeta Rotel Dip

I made this last night and it was a big hit at my house. Don’t worry if you don’t like cabbage… you can’t taste it in this dish.

Like Velveeta Rotel Main Dish

1 1/2 lbs hamburger
1 small can Rotel Tomatoes
1 bag Angel Hair cole slaw mix (cabbage)
8 oz American Cheese

Brown hamburger and drain. Add tomatoes and cabbage. Simmer until cabbage is tender, about 15 minutes. Add cheese and mix well after cheese melts.

My family really loved this dish and it is really easy and quick for a work night supper. Also, I think this cabbage would be a good substitute for noodles and spaghetti in other recipes.

Time to review..
nearly 2 years on atkins plan..
1 year using lcf’s chat and bbs..
start 458lbs..now 310 lbs..1st goal 200 lbs.. reweigh at end of this month..
weighing 2 monthly..
whoopee moments..
400 lbs.. achieved..
300 lbs.. approaching.. i can smell this one..
i found a few veins..in hands feet..
hey.. most joint pains went away..(very subtle)
energy ramping up..
the days are getting longer.. no naps 4 me..
mental processes seem sharper..produce more output..
2 new grandkids.. no credit to me.. but great all the same..
worked 27 hrs straight on a project and was only exhausted.. not romeoed sierra..
succesfuly worked away at sea again.. and showed a few knowitalls a thing or 3.. sweet that was..
found i could live in an enviroment where i did not control the food supplied.. but could control the food eaten..

downers over the last couple of years..
i am lagging somewhat in relation to my original plan.. (goal in 3 years).. so what.. i will get there!
2 bloody years have passed.. boo hoo.. well everybody else lost them as well!
i am not at goal.. bleat bleat bleat.. some ppl have actually put on weight in that time!
one close friend and several friends have died.. (ill health and accidents).. i will remember them!
my parents are fading.. and there is little i can do.. i can enjoy their days left..
hearing is diminishing.. what did you say?
one of my girl childs is having matrimonial troubles.. she won’t let me help.. i sure i am objective enough to help..
lost a couple of special cyber friends.. (just disappeared) weird that.. and found i was surprisingly saddened.. must re-evaluate staus of cyber friends so as to not be saddened! (think about that somemore)

assessment..
most of the good things over the last couple of years are as a result of paying attention to dietry considerations.. especially weight reduction.. but not only weight reduction!
most of the downers are due to the passing of time and not directly related to anything i can help..

recommit..
weigh each 2 months my scales.. my datum..
reread my diet manual..
log at least weekly..
chat at least weekly..
cross the 300 lb barrier and look to 200 as next "must do"
combine exercise with kids.. g/kids.. dog.. some other human (or whatever)interaction and not only gym equipment.. (yeah wear the bloody dog out.. right..)
3 month medical.. blood work and pressure.. doc weigh..
donot be frightened and have a prostrate exam.. then have one each bloody year.. leave my bum alone you devo!

well.. what did i forget? who cares.. move on mate..

All of my friends know about the fantastic recipes I get from this board….. yea, I know, me and my big mouth and for letting them taste what I make . Anyway, I have been asked to come up with THREE possibilities of a vegetarian main course for a "Thanks Friends Giving" get together. (Isn’t that the cutest idea you ever heard for a get together of friends that do not have any family or no one else in town to celebrate with? ).

The only one I can come up with so far is an eggplant "lasagna".

PLEASE help me!

WHat will be your main meat for Thanksgiving?

Us? Smoked Turkey & Ham…..and probably either a beef roast or pork loin roast for a sibling who doesn’t like turkey or ham

I need an alternate meat idea….

Buffalo Chicken Dip goes Main Course

Here’s the original recipe, and it’s awsome….

I adapted it to a main dish by cutting down the dip ingredients, pouring the sauce over sauteed chicken and baking it. It came out GREAT! Here’s the adapted recipe:

8 Boneless, skinless Chicken breasts (or use thighs, or both)
1 Tbs. Vegetable oil
3 OZ Cream Cheese, softened
1/2 C. Ranch Dressing
1/4 C. Frank’s Hot Sauce
1/4 tsp. Garlic Powder
1/2 C. shredded cheddar cheese

Season chicken with Seasoned Salt, or salt & pepper. Sautee in oil til browned. Place in greased 13 X 9 Baking dish.
Beat the cream cheese with a hand mixer til very smooth, then beat in Ranch Dressing and Hot sauce. (This is the only way to avoid small lumps of cream cheese) Stir in shredded cheese, and spread over chicken in baking dish. Bake at 350 for approx. 20-25 minutes. (I turned on my broiler for a few minutes to get the top brown.)

What kind of cheese do I buy? Anyone know? Is it the Kraft Deluxe American SLICES?? I was confused when I went to the store yesterday. Couldn’t figure it out.
