Still needing help

OK, I need help.
First, the stats. 6′ 3" 38 year old Male. I started at 309 lbs., and am currently at 283 lbs. I have been limiting myslef to right at or less than 20 carbs a day, and am stuck where I am.
My BMI is 2034, and my recommended daily caloric intake is 3152. Here is a two day example of my menu:
Day One
Breakfast
1 serving Peanuts
4 slices Bacon
4 Breakfast Sausage Links
Snack
3 Servings Pork Rinds
Lunch
3 Grilled Chicken Tenders
1 Smoked Pork Rib
Dinner
1 Sausage Link
1 Cup Lettuce
2 Servings Casaer Dressing
1 Medium Smoked Pork Chop
1 Smoked Pork Rib
Day Two
Breakfast
2 tblspn Whipped Cream
1 Cup Almonds
5 Slices Bacon
Snack
2 Servings Pork Rinds
Lunch
4 Servings Rotessorie Chicken
1 Cup lettuce
3 mini peppers
Dinner
3 Servings Rotessorie Chicken
1 Cup Lettuce
2 Servings Casaer Dressing
1 Medium Smoked Pork Chop
1 Smoked Pork Rib
I exercise 5-6 Days a week, and I am totally stuck. I am beyond frustrated. Can anyone help me out? Thanks.
P.S. I also use smokless tobacco.
I don’t seem to feel full unless I’m stuffed. This is something I’ve been battling and it’s really tough! I’ll have a meal and ask myself honestly "are you full?" The answer is often yes, I’m sufficiently full…..but I still seem "hungry" unless I’m stuffed! How do I teach myself to be satisfied with just a little full and stop myself from eating until I’m totally-up-to-the-brim-full? Often (maybe 75% of the time) I can assert enough willpower to step away from the table, or the food, or whatever but I still end up with that nagging feeling of wanting more even when I’m physically no longer really hungry. And then there are those times when my willpower loses out and I continue to eat. Are binging problems ever really conquered? Will this be a battle all my life?
I just found out I have gout and am doing Atkins induction. The doctor said no Atkins. Does anyone know if there is anyway I can stay on some form of Atkins?
Well lately I beleive I have been going over 20g or at least I’ve been eating things that I didn’t eat in the beginning and I still seem to be losing weight or staying the same which is good. I’ve even been drinking like 1 atkin shake everyday and I’ve been eating sugar free popscicles. One reason I may still be losing weight is because I do have to remember to eat. I don’t think about food like I used to. So I basically eat a hearty breakfast. Snack throughout the day and eat a nice size dinner. I’m going on my 4th week of atkins tomorrow.

I am starting Atkins induction. I have done it in the past and been successful.
I love (natural) peanut butter…..I CRAVE it. Has anyone had success losing on Induction while still eating a couple of tablespoons of peanut butter a day!
