Whoever invented LC "French Toast" is a genius!

My son came home with a stomach bug, and of course I caught a touch of it — not really bad, but I was feeling nauseous all yesterday afternoon.

The best, BEST thing to soothe a funny tummy — LC French Toast! If you haven’t had it, it’s eggs scrambled with cinnamon, vanilla, Splenda, and nutmeg — topped with butter and SF maple syrup.

Not too heavy, sweet and soothing, it was perfect sickie food.

    I haven’t seen a formal recipe, just descriptions here in threads. Here, I’ll tell you what I did:

    Beat 3 eggs in a bowl. Add 1 tsp vanilla extract, 1/4 tsp nutmeg, 1/2 tsp cinnamon, 1 packet Splenda, and mix together.

    Scramble in butter. When finished, put on a plate — top with butter and SF syrup.

    Easy! Amounts are approximate — modify to your taste.

    Somebody else may remember the equivalents — I think the packaged stuff has a filler in it, that makes it measure different than the packets.

    I’m gonna have to try that recipe I make Mock pancakes and there delis. Here’s the recipe if you want to try it

    2eggs–2 large tbs of ricotta cheese–pinch of cinnamon–2 pks splenda
    Mix it all together and put in a fry pan and cook as you would pancakes. Makes one large but I can’t flip it to well so I make 3 small. But sf syrup on it. My dh likes to put sf jam on it. oops don’t forget to oil the pan

    To me the plain egg one was just like a sweet omelet

    There’s also a recipe where you crush pork rinds, beat eggs and pour them over the crushed rinds, add splenda cinnamon whatever else you want, wait a couple of minutes for the pork rinds to soak up the egg, then cook. Don’t knock it till you try it!!!!

    For pancakes, cream cheese and egg blended together with splenda. The cream cheese makes a HUGE difference in the texture (more like pancake than omelet.

    I make my moch french toast with pork rinds – it makes them test less eggy IMO.

    ITA, more like french toast, less like cinnamon omelet.
